Celebrate Spring With These Rhubarb Recipes

The beginning of spring is also the beginning of rhubarb season, a veggie (not a fruit!)  that really flourishes in April. If you find some at your local farmers’ market, these are the recipes you should make with it.

Rhubarb Crisp [Delish]
Anyone who doesn’t have the time (or desire) to make a pie can always toss together a simpler crisp, like this one. This easy recipe instructs you to slice rhubarb and combine it with lemon juice and sugar, then top the sweet base with a crumbly topping of butter, oats, flour, pecans, and, of course, more sugar!

Strawberry Rhubarb Coconut Popsicles [Life Made Sweeter]
On the first truly warm day of spring, you’ll want to have these ice pops ready to go. Since rhubarb is naturally tart, it’s often paired with fruit—usually strawberry—just as it is in this recipe. Just dice up some strawberries and chop up a bit of rhubarb, then add maple syrup. Layer the sweet combination in an ice pop mold with full-fat coconut milk for beautiful, frosty confections.
