In the mood to do a bit of baking this spring? Take advantage of everything the season has to offer and skip the boxed brownies! Try these recipes instead, which feature ingredients that are in-season this time of year.

Lemon Blueberry Bread [Taste of Home]
This treat lands somewhere right between bread and pound cake, and it consists mostly of ingredients you probably already have in your pantry. Ample amounts of butter and sugar join forces with fresh or frozen blueberries and lemon to create the sweet-tart bread. Bake the loaf to golden-brown and then drizzle it with a glaze made simply of lemon juice and sugar.

Rhubarb Cornmeal Crumb Cake [Bon Appetit]
If you grew up eating rhubarb pie, this recipe is essentially a modern version of your childhood favorite. It’s similar to a crisp, but where you’d expect to find a crust of golden-brown oats, there’s a crispy coating of cornmeal, butter, and, of course, plenty of sugar. The bottom layer of the cake features tender rhubarb combined with Greek yogurt, white and brown sugar, a dash of ginger, and some more of the cornmeal.

If you love strawberry shortcake, you’ll be a fan of this recipe! It features fresh strawberries and light, fluffy angel food cake, very similar to strawberry shortcake. The main difference is the filling. Whereas whipped cream usually goes solo, this recipe calls for whipped cream combined with cream cheese and sweetened condensed milk for a slightly denser texture.
