Farmer’s markets may not be booming this time of year, but that’s not because fields aren’t overflowing with fresh produce! To the contrary, many hearty veggies are in season this time of year. Here are a few recipes you can make to celebrate these seasonal ingredients!
Sweet Potato Lasagna [Delish]
With ample amounts of cheese, Italian sausage, spinach, and marinara sauce, this fresh take on lasagna is a lot like the traditional recipe. The main difference? It doesn’t involve any pasta. Instead, tender slices of sweet potato bring deliciously starchy layers to the dish. Bubbly, golden-brown cheese and fresh parsley on top serve as the final flourish.

Looking for a sweet side dish that’s also super healthy? These balsamic roasted beets should fit the bill—and they couldn’t be easier to make.
