Sweet Potato Marshmallow Bars [Just a Pinch]
These sweet potato bars are kind of like a throwback to Thanksgiving! But this updated version of sweet potato casserole is served up in brownie form. Boil and mash fresh sweet potatoes, or make things easier by simply mashing soft canned sweet potatoes. Toss them with chopped apples, brown sugar, cinnamon, and nutmeg, then spread the mixture into an even layer in a baking dish. Add a crumbly topping of oats, flour, sugar, and butter, and bake the crisp for 45 minutes. Then enjoy!
